Everything you'd like to know about Aceves and tequila.
Aceves Reposado is an artisanal tequila from the highlands of Arandas, Jalisco — produced under NOM 1414. It was born from a personal story: on the wedding night of Cindy Aceves and Philipp Zinder, Cindy's family poured a tequila they had made themselves. For the German guests, the room stopped for a moment. Five years later, that taste is in a bottle.
Every bottle of this 1st Edition is hand-numbered and signed Familia Aceves — a tequila made the way you'd make it for the people you love.
The 1st Edition is our first official release of Aceves Reposado. Every bottle is individually numbered. It marks the beginning of Aceves — and makes each bottle a small piece of history. We make one thing, and we make it carefully.
Tequila is a spirit made from Blue Weber agave (Agave tequilana Weber Azul) that can only be produced in certain regions of Mexico — primarily in the state of Jalisco. The Consejo Regulador del Tequila (CRT) oversees and regulates the entire industry.
Aceves is made from 100% Blue Weber agave — nothing else fermented, nothing added. The agave is grown in the highlands of Arandas, Jalisco, where red earth and high altitude produce agave with a sweeter, creamier character. The water comes from a deep well.
- Harvest — Agave hearts (piñas) are harvested by hand after several years of ripening.
- Roasting — Slow-roasted in traditional masonry ovens.
- Milling — Pressed through a roller mill to extract the honeyed agave juice.
- Fermentation — Slowly in open-air tanks. During fermentation, we play classical music (Mozart) into the tanks — the vibrations encourage a more active, complex fermentation.
- Distillation — Double distilled in copper pot stills, bottled at 40% Alc. Vol.
- Ageing — Rested in American oak barrels for the deep wheat-gold hue and notes of vanilla and soft spice.
Blanco (Silver): Clear, bottled directly after distillation. Fresh, pure agave flavour.
Reposado (like Aceves): Aged at least two months in oak. Amber hue, balanced aromas of vanilla and wood.
Añejo: Aged at least one year. More complex, darker, with pronounced barrel character.
Extra Añejo: Aged at least three years — the most intense category.
Aceves is a Reposado: the balance between the fresh soul of the agave and the depth of the barrel.
100% agave tequila is made exclusively from the fermented juice of Blue Weber agave. Mixto tequila contains at least 51% agave juice — the rest can come from other sugar sources, which often results in a less pure flavour.
Aceves is 100% agave. It says so on the label — and it's the only thing we'd ever accept.
As a spirit, tequila has no expiry date and is theoretically indefinitely stable — even after opening. Store sealed, away from light, and cool.
Yes. Aceves is made from 100% agave — no additives, no animal products. It is naturally gluten-free and vegan.
Neat: In a tequila glass at room temperature. No ice, no rush.
Over one cube: A large ice cube softens it gently and lifts the floral, creamy side.
The slow Old Fashioned: A bar spoon of agave syrup, two dashes of bitters, one cube, an orange twist — stirred slowly.
Skip the salt and lime — that ritual was invented for low-quality mixto and hides everything worth slowing down for.
Before the meal: Aged cheese (Manchego), toasted nuts, a drizzle of honey.
Main course: Mole poblano or grilled meats. Smoke meets smoke.
From the sea: Grilled fish with citrus — the floral, herbal side comes forward.
To finish: 70% dark chocolate or dulce de leche. The perfect last note of the evening.
